What is Paneer?
Paneer is an Indian Cottage Cheese. It's a firm but soft fresh cheese, commonly prepared in the Indian Subcontinent. Paneer is white, it doesn't need to age. Besides that, it doesn't melt.
It's made by adding lemon juice, vinegar or other acids to milk. The milk then curdles, separating the milk curds. The curdled milk is then hung and that way the firm parts are formed and later shaped.
If you can't get this Indian cheese, you can always substitute paneer with various other ingredients.

Love paneer! I make it at home regularly, it's so easy and quick. The tikka skewers look amazing, I will have to try that. Usually I fry my paneer into "steaks". Cheers, Louise

It's been ages since I made a batch of paneer. I love mutter paneer, of course, but it's wonderful in vegetarian samosas with peas and potatoes and lots of spices.
On second look, the herbed/spiced paneer looks delicious.
