Paneer Indian Cottage Cheese Pancake for #Sundaysupper

Mhm a moist and rich plate of freshly fried golden pancakes to kick start the day. Sounds like a Food Elysium, doesn’t it? Yet, as we all know it, we don’t have to die to indulge such utopian joys on earth, we just need a stove a couple of basic cooking utensils, some flour, eggs, butter and sugar. Mix it, pour it, listen to the sizzle in the pan, done! But what if we need a pancake change and what if we don’t want to part from our beloved pancakes in the mornings? Sounds as if we need a pancake twist, something to enrich our pancakes with and maybe turn them into a healthier breakfast treat. How about some protein rich Cottage Cheese addition? A simple change in your pancake can turn it into a healthy morning treat, and the Cottage Cheese Pancake will nourish your needs  and give your body the energy that you need to cope  with the busy day.

Paneer is a plain nearly tasteless Cottage Cheese that originated in the Indian Subcontinent. Over the past few months I have witnessed a surge of Western recipes that call for the humble Indian cottage Cheese in the ingredients list. This is not a coincidence, in fact the Indian Cottage cheese has become a popular ingredient simply because it is so versatile. We shouldn’t forget too that the fresh cheese is considered a healthy foods. Now that should motivate you and your peers at home to utilize it more in the daily menu plan. Therefore I have been busy creating a few Paneer inspired dishes, so to infect you as well with my paneer fixation. I have been already efficient in the last weeks with a few recipes such as the Ham and Cheese Crescents & the Foil Wrapped Potatoes and Cream Cheese topping. Of course I am planning to come up with some more recipes with paneer in the future. If you have any suggestions, please feel free to leave them underneath in the comment section.

The Cottage Cheese pancake isn’t much different to a plain pancake in the preparation. When you plan adding this ingredient I would suggest to use a moist and fresh variation. Of course you can always use some frozen cottage cheese but that might alter the taste and texture a bit. In this recipe I took the freedom to blend the cottage cheese with some milk, I wanted a smooth paste like consistency without any bits and pieces. Further, I chose to throw in some homemade Vanilla Sugar. The vanilla flavored sugar gave the Cottage cheese pancakes another flavor dimension and enriched it with pure vanilla seeds on top of that.

In case if you don’t know how to make your own Vanilla Sugar, just add some powdered sugar into a higher jar, mix in the scraped vanilla bean seeds and place your opened up vanilla bean in between the powdered sugar. Close the jar and leave it like that for 10 days at least. You might want to shake the jar every now and then so to allow the essence to disperse evenly. That’s all there is to it!

Ingredients
  • 150 grams Paneer
  • 220 milliliter Milk
  • 200 grams White Flour
  • 80 grams homemade Vanilla Sugar or 1 Packet (8 grams) store bought Vanilla Sugar
  • 2 Eggs
  • Butter for frying

Instructions
  1. Add the Paneer and around 50 milliliter of the Milk into a blender Jar. Blend it smooth and keep aside.
  2. Add the flour to a mixing bowl and mix in the Vanilla Sugar as well. Make a well into the center and add in the Cottage cheese mixture and the Eggs. Continue to pour in the remaining Milk as well.
  3. Mix the whole content to a smooth pastry.
  4. Heat up a pan, add some butter and pour about one ladle of pastry into the pan. Spread it evenly & quickly and allow it to fry for 2-3 minutes on one side. Flip it and cook it on the other side to a golden brown shade. Do that with the rest of the batter.
  5. Serve hot with syrups, honey or sweet sauces.

These sound interesting. I’ve never had a pancake with cheese in it but it sounds like it would be good and add a different texture to the pancake.

I’ve had paneer often, but never in a pancake! In fact I don’t believe I’ve ever had cheese in a pancake. Obviously I’ve led a sheltered life! Love the idea of it though – sounds wonderful. Thank you.

Entschuldigen Sie mich für mein gebrochenes Deutsch. Als ich in Goa war im letzten Jahr, hatten sie diese wunderbaren Pfannkuchen oder Crêpes mit braunem Zucker (jaggery?) Und frische Kokosnuss gefüllt. Ich glaube, sie dienen ihnen nur zu Ostern und sie nennen sie alebele? Sie waren absolut lecker und ich habe sie von einem Dorf Mutter leid, dass ich aß Essen im Hotel war.
Ich würde sehr dankbar, wenn Sie dieses Rezept posten könnte

I sure would love to have these for breakfast in the morning! I do make a pancake with ricotta which is probably very similar but I use some cornmeal in the batter and a leavening agent. I see that you don’t use a leavening agent and I do love the way your pancakes look. I think next time I’ll leave out the baking powder.

I thought of adding baking powder many times but at the end I decided to leave that out simply because I don’t want to absolutely add chemical agents when it can be done without too. They might not be that “fluffy” but I personally don’t care about that part. Of course if you prefer it with baking powder then you can add it here too. The paneer is quite compact but not heavy otherwise. You are right, in my opinion ricotta and paneer pancakes should be much alike.

It’s funny because “paneer” in farsi means “cheese” and for Persians, cheese equals feta. Now I need to hunt down Indian Paneer and check it out myself!
