Veg Caldinho Curry

My house is a mess. Chaos is residing in my four walls, just for todays day. I ll explain you whats going on. We are isolating from inside our ceiling, so that our house will be cooler in those scorching hot summer days, and for that we had to wait 3 days till that guy, who we hired, could come. So because of that I didn’t wash the floor of my house which by todays day was making me already sick. Our house, THE ultimate sanctuary, is kind of now infected. You might think I am nuts but I am very peculiar when its about my home and those guys working in there are not the most hygienic people.

So now I am sitting in my garden, because I cant watch them messing up my place, and I am waiting till they are finished. It is already night, they better complete today, because one more day like that and I ll kill somebody! The humidity and temperatures are inhuman these days again and the mosquitoes are as loving as always.  It was announced that tomorrow would be a day without electricity too. I can only shake my head and wait… wait for better times!

Because of the electricity cut, I wrote this post a day before, so don’t get confused! Anyway,… what’s my post all about?! My muse whispered me, or lets better say reminded me of a little curry, the Veg Caldinho Curry. Right now that’s my top curry recipe, my absolute favourite of all the Indian curries in this world. Its unique, yellowish green with mellow but satisfying flavours. Perfect for all those who scare away at the mention of hot spicy and the texture is a dream, wonderfully thick and filling. I have not met anybody who was disappointed by this typical Goan-Portuguese Curry. For those who have not dared much into pungent style Indian food, this curry will be a good start.

Veg Caldinho Curry

Yes, it was a stressful day, but we needed a pick up, a veg caldinho Curry and you wont believe me but it had its effect. Without it, I would have gone Berserk today. Because of it, I am only complaining and grumbling about our small situation here (sorry for that!). That’s one of my husbands ruses, he knows how to handle me, how to sooth me and keep me happy. If you haven’t guessed it yet, he is my eternal muse. =)

Veg Caldinho Curry

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Serving Size: 4

Sweet mellow Curry experience which is best served with rice and vegetables or with some warm chapatis, as I prefer it.

Ingredients

  • 1/2 Coconut - grinded
  • 1 1/2 Tbs Ginger Garlic paste
  • 1 large Onion - sliced quartered
  • 1 Tsp Turmeric powder
  • 1/2 Tsp Cumin powder
  • 1/2 Tsp Pepper powder
  • 1 Tsp ground Coriander seeds
  • 3 green Chilli - sliced in half (keep the seeds!)
  • 1 Tbs Tamarind Juice
  • 1 Tsp Sugar
  • pinch salt

Instructions

  1. First of all grind the coconut and place it into a mixer jar together with the ginger garlic paste and a little bit of water (as shown in the picture). Mix it all to a coconut milk and keep in a bowl.
  2. In the same mixing jar add some more water and the turmeric, cumin, pepper and coriander powder. Mix it well and keep aside.
  3. Cut the onion and fry it with little oil till translucent.
  4. Add in the thin coconut water with the spice mix to the onions in the pot. Let it boil and then throw in the chillies, a Tbs of Tamarind juice, sugar and the salt.
  5. Let it simmer for 2 more minutes and add in the thick coconut milk. Mix well and cook for an other 3 minutes.
  6. Ready to be served!

Do you know…I’ve never had this before! Is it traditionally served in the north? Being south Indian, I wonder if that’s the reason I’ve never had it. It looks a lot like regular ol’ dal but the coconut probably adds a beautiful savory-sweetness that would be so delicious! Thx for sharing!

I only know for sure that it is served in north goa. I guesse there must be slight different variations the further away. =)

Helene, I totally understand your mood. Even though I live in the middle of Europe, days without hot water or obligatory works/checks also happen and it makes me furious!  
This curry sounds fantastic and a great alternative for guests who are scared of spices (I’m not!). Thanks for sharing! Good luck with the end of works!

Heat alone is probably not the major problem, but the humidity…that would kill me. Get some rest and relax yourself sitting under a tree or hiding somewhere cooler…

Tell me all about it…the humidity,mosquitoes and the heat. What a terrible combination ! Though I really miss staying in Hyderabad, I’m thankful that I don’t have the extremely hot and mosquito laden summer here :-)
We make a slightly different variation of this and I love it !

th Nashira! you can add bimlis to that curry but I prefer it without. of course anybody can serve it with rice, meat and veggies. =)

sorry to hear about all the mess in your place – i can totally relate to that, am just the kind of person who turns into a demon in an untidy messy place – i love when the house in order and most things are in the right place where they belong…!! and when we have renovations happen —- demon is an understatement here .

I’m so with you on having strangers with dirty fingernails working in my ‘sanctuary’..touching everything.  Well, a good disinfection is in order once they’re done ;) .  Your veg curry looks so warm and comforting, not to mention I can tell it’s delicious by the ingredients.  As for experimentation and our ‘mad scientist’ genetics, no matter how many times it doesn’t turn out, it doesn’t matter, I live for this stuff!
