Lentils are full of healthy benefits easy to cook and a tasty way to enrich your daily meal plan. I will show you today how to make a simple delicious brown lentil pot with sausage.

 Serves 2

 0,4 kg Brown lentil

1-2 Frankfurter (or any other) per Person

1-2 strips bacon – cut in small stripes or add it as whole pcs

2 Medium Onion – peeled, cut in slices

1 Garlic head – peeled, crushed

2 big Tomatoes – cut in 1 inch small cubes

1 big Carrot – peeled cut in small thin strips

1 tsp Ginger Garlic paste

1 tsp dried Thyme

1/2 tsp Rosemary

little nutmeg scraped

few Pepper balls

Salt

Savory dried – optional

Chinese Seasoning – optional

Herb de Provence mix – optional

Garnish with fresh Parsley or Coriander

Brown lentils need at least 2 h soaking in water, some lentils types need some few more hours soaked before being cooked and then left over night in water. I try to keep it always as long as possible soaked which helps in cutting down the cooking time, but even I have a active life and tend to be short in time, in general. Best and quickest way is to add boiled water to the washed lentils and to keep it min 1 1/2 h standing.

Cut and prepare Onion, Garlic, Tomatoes, carrot and bacon. The bacon is mostly for the flavour, you can say essential for the tasty flavour of the whole pot. I for example don’t enjoy eating bacon, my husband ends up eating it, but I wouldn’t make this recipe without the bacon.
In a pot, add cooking oil and fry the onion and garlic for 3 min, on medium heat, soft.

Add the sausages and bacon and see that nothing burns on.

Stir, right away, in the cut tomatoes and carrot,

and the soaked lentils in water. Add around 1/2 – 1 cup of water to the pot, which will dissolve in time while cooking. Don’t add too much right at the beginning. You can always add in between water if it is too dry, but if you add too much from the beginning, you might end up with unwanted liquid when it is finished cooked, except you like it more wet in general.

Season the pot with salt, pepper balls, ginger garlic paste, scraped nutmeg, Thyme, Rosemary, Savory, Chinese seasoning mix and Herb de Provence mix and cook it on medium/high heat for 30 min, checking water level and stirring all 10 min. Give it more cooking time, if the lentils are still hard and unfinished. The ginger garlic paste should help the lentils to soften a bit and will give an additional great flavour, so don’t miss on it!
Voila, ready to serve and to enjoy! Garnish with Parsley or Coriander leaves for a extra zing in the dish.
Coriander will give it a bit of a Indian taste and is worthwhile to try for a change!
